The Carcajou can be used with confidence in slippery skinning and cleaning action, such as cleaning fish and birds, caping, and other precision tasks. The friction grooves near the blade tip allow use of a pencil grip for delicate caping around ears, antlers, nose and lips. Russ Kommer finds it to be the fastest way to remove the blood groove from salmon: just make a fast slit on either side of the blood groove and use one stroke of the pommel ring to scrape it away as you would with a spoon.
