What's a Jaeger? For starters, it's the German word for "hunter", but the knife was actually named after the hawk-like bird named "jaeger" that nests near the Alaska hunting and fishing lodge and is incredibly sleek and streamlined-just like our knife. The name is fitting when applied either from the German language perspective or in honor of the bird. This is possibly the most beautiful and sleekest knife we have ever made. Made as a premier boning and capping knife, the Jaeger is 8-1/4" overall and has a 3-1/2" cutting edge. Just shy of 1/8" thick (.118"), the blade steel is highly prized ATS-34, a premium grade stainless steel. The blades, treated with cryogenic (deep freeze) and double-tempering process and ata Rockwell of 58-60, will hold an incredible edge. The non-slip ridges on the back of the blade will give you comfortable platform on which to place either your forefinger or thumb while using the knife. Also, the individual finger grooves and deep front coil provide a comfortable and positive grip. The blade is full-tang and double-riveted, with a brass lanyard sleeve so the handle scales are securely fastened to the blade. This is a knife that is lightweight and easy to carry but incredibly versatile and strong. The Jaeger is large enough to butcher a moose in the Alaskan brush, yet small enough to comfortably field-dress small game and fillet fish. This is a great looking knife and is available in either black rubberized "Suregrip," desert ironwood, G-10 micarta or genuine stag handles. The sheath is made from genuine 100% American split grain cowhide, vegetable tanned then oiled (so your high quality knives won't rust in the sheath!). We designed the sheath to hang at about 45 degrees off your belt. This eliminates the problem of the sheath point poking into the seat or ground, or the handle jabbing you in the ribs while you are seated.
